  1. Combine oats and crispy rice cereal in a bowl.
  2. In a small pan, melt butter on medium heat, then add sugar and honey. Cook until it bubbles, then turn heat down to low and cook for 2 more minutes.
  3. Stir in coconut flavoring, then pour over the oat and cereal mixture.
  4. Once combined, transfer to a pan and press down until bars are about 1/2 inch thick.
  5. Let set for a couple of hours, then cut up and serve!

    Gluten sensitivity – what are the options for crispy rice and can one use Gf steel cut oats in this recipe? – suggestions welcomed.

      Hello,
      Rice is a gluten free grain, so you should be able to find a gluten free puffed rice cereal to use, but you could also used a puffed millet cereal, puffed quinoa cereal, or similar if you prefer. We would not recommend using Steel Cut Oats to bake with however, because they do not absorb liquid as readily as rolled oats, and can remain too crunchy and hard when used in baked goods.
