Instructions
  1. Place pumpkin seeds and cocoa nibs in a food processor and pulse until they resemble large crumbs; remove and set aside.
  2. Place dates in the food processor and process until broken into small crumbles.
  3. Add remaining ingredients, including the reserved pumpkin seed mixture, to the food processor and process until a dough forms, about 1 – 2 minutes.
  4. Portion 1 tablespoon per serving and shape each into a ball. If desired, roll each ball in coconut. Store covered and chilled.

    Very disappointed in this recipe and the Chai Protein Powder. I find it to be very sweet and is gritty when used in this recipe and in the smoothie I made using it. I am sorry to say I won’t be buying this particular product again. I have been very satisfied with other products l have used from Bob’s Red Mill.
