  1. Preheat the oven to 375°F. Mix together peanut butter, sugars, eggs, vanilla and salt until creamy and smooth. Stir in coconut flour until it is fully incorporated. The dough will be soft and sticky.
  2. Drop tablespoon sized mounds of dough, 2 inches apart on cookie sheet lined with parchment paper. Bake for approximately 14 minutes.
  3. Allow the cookies to cool for about 5 minutes before removing them from the cookie sheet onto a cooling rack.
