Healthy Waffles with 3 Ingredient Coconut Syrup

We love these easy-to-make waffles made with smoothie ingredients- a smoothie in waffle form! These waffles are hearty and filling, and yet light and tasty all at the same time. This recipe includes a simple, 3 ingredient syrup or you can customize with your favorite waffle toppings. A delicious protein filled spin on a breakfast staple!

For the Waffles
  1. Slice and mash your banana (slicing it first will make it easier to mash).
  2. Place mashed banana in a bowl with the other ingredients and whisk together until well blended.
  3. Grease your waffle iron with coconut oil, and then place approximately 2/3 cup (more or less, depending on the size of your waffle iron) of the waffle mix into the waffle iron.
  4. Let it cook through, according to your waffle maker instructions. Top with a bit of butter and 3- Ingredient Coconut Syrup (recipe below)!
For the Syrup
  1. In a sauce pan, whisk all three ingredients together over low heat. Stir continuously until completely blended and syrup has begun to simmer slightly. Serve over warm waffles and toppings of your choice.
