Baking Instructions by Hand:
  1. Preheat oven to 375°F. Dissolve enclosed packet of yeast in 1 3/4 cups warm (110°F) water and let stand for 5 minutes to foam. Have all ingredients at room temperature. Put dry mix in large mixing bowl (preferably use a stand mixer). Add eggs, oil, cider vinegar and yeast-water mixture.
  2. With mixer on low speed, blend all ingredients until smooth. Turn mixer to medium and beat 15 seconds or until mixture thickens slightly. Pour into generously greased 9 x 5-inch nonstick pan. Smooth top of dough with wet spatula. Cover pan with plastic wrap and put in warm place (75° to 80°F) to rise for about 40 to 45 minutes or until dough is level with top of pan.
  3. Bake 60 to 65 minutes or until internal temperature of bread reaches 205°F, covering bread with foil after it starts to brown. Remove pan from oven and cool bread in pan for 5 mintues. Remove bread from pan and finish cooling on wire rack. Cool completely before slicing.
Bread Machine Baking Instructions (1-1/2 lb Loaf):
  1. Remove yeast packet from package. Have all ingredients at room temperature. Follow your specific machine instructions for adding yeast, the liquid and dry ingredients in the proper order. Be sure to whisk together the water, oil, vinegar and eggs together before adding to bread machine. Set controls for setting recommended by manufacturer, or to white bread basic setting. Remove bread from bread machine and cool thoroughly on wire rack before slicing.

      This recipe can be prepared with any oil of your choice. If you use coconut oil, be sure to melt it first.

    I thoroughly enjoy both your GF bread mixes, and especially appreciate that you look to non-rice solutions as your primary flour.
    Just for a change, I would also love something less “white” than the GF Homemade Wonderful mix and something less dark, but still full of whole grains, as your GF Hearty Whole Grain mix. What about mixing them, half of each bag combined?
    The mixes have different kinds of liquid (milk vs. water) and eggs (plus whites or not). What kind of liquid would you recommend that I try using? What egg ingredient? Since I’ll be using half of each package, I plan to use the yeast packet from one of them, but could also supplement it. Anything else I should think of?
    Do you have something like this in the works?!?
    For those of us who eat as an aesthetic pleasure rather than merely to satisfy hunger, your products are a great gift. Thank you!

      We have not tested the preparation method that you would like to try. This may be possible and if wanting to experiment, try the following measures below.

      1-3/4 cup Milk or Water
      3 Large Eggs
      1 tsp vinegar
      1/4 cup butter or oil
      1.75 cups Gluten Free Hearty Whole Grain Bread Mix
      1.75 cups Gluten Free Homemade Wonderful Bread Mix

      To replace the eggs required to prepare this mix, choose one of the options below.

      Flaxseed Meal: Mix together flaxseed meal and water, let sit for a few minutes, then add as you would egg. 1 Tbsp. flaxseed meal + 3 Tbsp. water = 1 egg.
      Psyllium Fiber Powder: For a vegan egg replacer in baked goods, combine 1 Tbsp. Psyllium Fiber Powder with 3 Tbsp. water for each egg needed. Let sit 5 minutes before adding to your recipe.
      Chia Seeds: To replace a large egg, soak 1 Tbs. chia seeds in 3 Tbs. water for 5 minutes until the mixture has the texture of a raw egg.

      To use this mix for a 1 pound Bread Machine
      make the following adjustments:
      o REDUCE MIX BY 1 cup, EQUALING 2 ½ CUPS.
      o REDUCE WATER BY ½ cup, EQUALING 10 OZ.
      o REDUCE EGGS BY ⅔, EQUALING 1 WHOLE EGG AND 1 WHITE.
      o REDUCE OIL BY 1 Tb, EQUALING 3 Tb.
      o REDUCE VINEGAR BY 1/3 tsp EQUALING ½ tsp.
      o REDUCE YEAST PACKET BY 1 tsp, EQUALING 1 ¼ tsp.

    Can this mix be used to make dinner rolls? If so, do I need to change anything in the ingredients or directions?

      Hi Patrice,
      To make rolls, you can do the following: Mix as directed and then portion dough into 3 Tbsp (50g) portions. With wet hands, gently shape each piece into a ball and place on the prepared baking sheets. Lightly brush or spray each piece with oil. Cover with plastic wrap and let rise in a very warm place until doubled in size, about 40 minutes. While the dough rises, preheat the oven to 350°F.
      When the dough has doubled in size, remove plastic wrap, (if necessary, reshape any misshapen pieces with wet hands) and transfer sheet trays to the preheated oven. Bake until golden, rotating trays halfway through baking, about 15 – 20 minutes for rolls and 20 – 25 minutes for buns. Let cool at least 5 minutes before serving.

      Fruit bread usually works best as a “Quick Bread” recipe like this one from our website. Our Gluten Free Hearty Whole Grain Bread Mix is a yeast bread recipe that may not rise properly if too much extra liquids or other ingredients are added. If you’d like to add some extras to this mix, we may suggest about a 1/4 cup of herbs, cheese, nuts, or dried fruit.
