Chocolate Cherry Almond Cake

This is the cake of your dreams! An utterly delicious, full of flavor, and quite simple to make cake utilizing a Swedish almond cake recipe, simple chocolate butter frosting, and cherry pie filling.

For the Cake
  1. Grind the almonds, baking powder, and flour in food processor.
  2. In large bowl whip the egg yolks, sugar, and almond extract together.
  3. Add the flour mixture and stir gently just until blended. Do not over-mix.
  4. Beat the egg whites until stiff peaks.
  5. Gently stir 1/3 of the whipped egg white into the yolk and flour mixture until the mixture is softened.
  6. Fold the remaining egg white into the mixture. Gently fold until the flour/yolk is mostly worked into the egg whites. This can take a few minutes.
  7. Pour into 9" cake pan (pans if you're making layers) that have been sprayed and sugared (see notes below) and bake for 20-25 minutes at 350 degrees until edges are set.
For the Frosting
  1. Beat the butter, cocoa, sugar, and extract together.
  2. Top the cake with the frosting, making a shallow well in the center and add as many cherries as you prefer.
Recipe Notes
To Sugar a Cake Pan, pour 1 tablespoon of sugar into an 8-inch round cake pan and tap around the pan until it covers the bottom and up the edges.
This cake can make one large cake or 2 smaller cakes which can be layered.
Frost the outside of the cake and lightly coat with crushed almonds if preferred.
