Instructions
  1. Preheat oven to 450°F. Spray baking sheet with cooking spray, set aside.
  2. Sift dry ingredients together in medium bowl. Cut butter into flour mixture until it resembles small peas.
  3. Stir in enough buttermilk to form soft dough that holds its shape when pressed together. (You may not need all the buttermilk).
  4. Place the mixture on prepared baking sheet.
  5. Lay sheet of waxed paper over biscuit mixture and press to 1” thickness and about 6” x 6” square or circle.
  6. Remove sheet of waxed paper and cut into 8 or 9 round biscuit shapes using a 2” biscuit cutter or open end of glass.
  7. Remove uncut portions of biscuit dough and gently shape into 2” circles, or simply cut dough into 9 square pieces and spread pieces across baking sheet.
  8. Bake for 10-12 minutes or until lightly browned.

I have made this recipe twice and it has become my favorite. Instead of butter, I use either lard or coconut oil, omit the sugar, and use all the milk. I mix it well for a few minutes and drop by spoonfuls instead of rolling out and bake. Seems the more I mix it the fluffier the biscuits come out. I give it 5 stars!

      Hi Pam,
We haven’t tried this substitution, but if you’d like to try this method, I may suggest substituting the same amount of Gluten Free All Purpose Flour plus a bit more for dusting and working with the dough.
