Rinse rice in 2-3 changes of cold water. Place rice, 2 cups cold water and oil (optional) in a 2-quart saucepan with lid. Bring to a boil over high heat, stir once or twice, and cover. Reduce heat to lowest setting and simmer for approximately 25-30 minutes, until tender. Do not remove lid during cooking process. Makes 4 servings.
