  1. Preheat oven to 350°F. Spray a muffin tin or line with paper liners.
  2. Mix together Bob’s Red Mill Organic Hard White Whole Wheat Flour, sugar, baking powder, baking soda and salt.
  3. In a smaller bowl, combine mashed bananas, egg and melted butter. Add banana mixture to flour mixture and fold to incorporate then fold in walnuts. Do not overmix.
  4. Portion batter into prepared muffin tin and bake until the tops spring back when lightly touched, 25 – 30 minutes.

    Made this recipe Gluten free 1 to 1 baking flour by adding an extra egg and using brown sugar instead. they came out so moist and delicious. Who says gluten free is dry!?
