  1. Preheat oven to 400°F. Insert paper liners in muffin tins, set aside.
  2. In a large bowl, combine the bran, whole wheat flour, baking soda, baking powder, salt, brown sugar, and walnuts and stir until well mixed.
  3. Measure the oil and yogurt into the blender (or processor) and add the banana, broken up. Blend at medium speed until uniform, then pour over the dry ingredients. Stir gently until all is wet.
  4. Spoon the batter into the foil liners and bake for about 20 minutes.



    Makes 12 muffins.

      This recipe is correct in not calling for the use of eggs. The yogurt and banana will function in place of eggs.

      Hello,
      If you don’t have wheat bran, we would suggest using another type of bran or germ as a replacement; oat bran, rice bran, or wheat germ would be good substitutes. Using all wheat flour may result in a muffin that is too dense and dry. You may be interested in a recipe like this instead- it does not call for bran and you can use the flour of your choice if you don’t have our Ivory Wheat Flour.
