Thanks for the information, I understand why baking soda is used in oatmeal raisin cookies now instead of baking powder. I did not know that brown sugar has an acidic component in it (e.g. molasses). “…it often has an acidic ingredient as its counterpart, such as pumpkin, molasses, maple syrup, buttermilk, brown sugar or lemon juice.” Thanks for this list, I feel like I can do some experimenting.

Baking powder obviously has sodium as it is comprised of Baking Soda....
