Tapioca starch is pure white, which suggests it has been bleached. Surely this would decrease its nutritional value?

Hi Heidi, our Tapioca Flour is not bleached. The starch is extracted and then dried before being ground into a fine powder. The starch is naturally white, but there is no bleaching involved.

Yes, you can grind up the tapioca to make flour but it would just depend on how finely you grind it. Let us know if you experiment!

I don’t do gluten free, but how would one add tapioca flour to things like pizza crust or breads to enhance flavor and/ or texture? Can you use it to make/enhance pasta?

Am I correct in assuming that when converting a conventional recipe to gluten free you would still use the same volume of flour but, simply replace a portion of it with tapioca flour in order to to lighten up the results?

You mention that it is used on a 1 to 1 1\2 ratio. Which one is 1 and which one is 1 1\2? Is the regular flour 1 and the tapioca flour 1 1\2?

I have a favorite old (3 generation) recipe for Cranberry Bread (actually a loaf cake) from my Grandmother. I am gluten free, what is the amount of tapioca flour to use?
1 cup flour + ??? tapioca (I've tried using almond flour and the cake comes out too moist - heavy & thick). Any suggestions you have would be welcome!
