Tried to make this and the dough mix was way too wet, even after adding another entire cup of millet flour.

Hello and thank you for your comment! We're sorry the dough was too wet; at first, you'll just want to use 1/4 cup of water, only adding the additional water if needed. If you used whole eggs instead of egg replacer, you may not need the extra water. Gluten free dough will be stickier than wheat dough- it should be the texture of a very thick batter that you can shape, and it helps if you wet your hands to keep it from sticking to you. We're happy to troubleshoot further if you'd like and you can reach us at customerservice@bobsredmill.com.

Hi, I see there is a new formula for this Pizza Flour on the bag, was it also done by Sarena?

Bob's Red Mill Staffjames

Hello,
I'm not sure which bag you are referring to, but generally, recipes on our product packages are formulated by our test kitchen team. We hope you enjoy any recipe you try!

Hi,

can I just use your 1 to 1 Baking Flour instead of the Millet Flour, Brown Rice Flour and tsp Xanthan Gum? It looks like that stuff is already in the 1 to 1 Baking flour. But if I use it, should I change any other part of the recipe?

thanks

Donald

We have your gluten free pizza crust mix, and would like to make calzones, instead of a pizza crust. It says to pre bake the crust when making pizza, but that isn't done for calzones. Can we load the calzones and bake without pre baking the crust. Thanks.

Anthony Martino

Made it using a twist, a little powder milk. Wow, it came out awesome.

Would Bob's Red Mill 1 to 1 baking flour work with this recipe?

Whitney BarnesMartha

Hi Martha - We haven't tried that. The texture and flavor would likely be different as that is made from a different blend/proportion of flours.

This recipe sounds tempting as I love pizza but can't do dairy and wheat. The only problem is I don't have a stand up mixer or dough hook. What would you suggest for making this in another way?

Whitney BarnesDavid Ward

Hi David, you can also make this recipe by hand. Just whisk together the dry ingredients then use a sturdy spatula to combine additional ingredients. Enjoy!
