I had been using GF Flour to Bake with & became Allergic to Tapioca, which seemingly is contained in almost every GF product on the market... I am now mixing my own "Bobs Red Mill Flour Blend"....! I need this book for guidance.... Love Bob's Red Mill Flours and have used them for many years...!

BEST ANSWER: Hi! It depends on your recipe, but most likely a yeasted bread recipe will call for a "porridge" - which is cooked and cooled oats/grains.
Breads and snacks, does the recipes have a lot of sugar (1 cup or more)? I am diabetic looking for wholesome grain snacks with out a lot of sugar in the recipes.

BEST ANSWER: Hi! No, the majority of recipes in this book do not contain a large amount of sugar. There are also plenty of recipes calling for alternative sweeteners like maple syrup, coconut sugar, or applesauce.
