Rich and moist baked goods.
This particular egg replacer makes baked goods more moist, with a rich texture. We’ve tried so many, including the gluten free varieties, and this is by far the best.

For what I use this for, medicinal cookies, it works wonders! I have food sensitivities and cannot eat eggs, so I tried this and it works great for my recipe. I cannot taste any difference. I absolutely love the packaging with the Velcro closure. It makes things so much less messy and so much easier to work with.

Good for pancakes...
Having tried this in several recipes I'm just kind of unimpressed. It works fine for pancakes, couldn't even taste a difference, but both boxed and from scratch cake recipes it gave a weak, crumbly texture and a strange smell. Its easy enough to find, and DOES work for pancakes, but I still don't feel like it deserves more than 2 stars for the recipes it has ruined for me.

My wife has used this product in her high-protein, high-fiber breakfast shake for the past five years. She has tried other egg replacer products and Bob's Red Mill is the only one that makes the shake resemble a real shake. Can't do without it!

This works very well for me, in revising baking recipes to be vegan. I usually froth it to enhance emulsification, with whip attachment of hand blender. Some killer baking recipes have resulted . . . non vegans are surprised they are vegan. Love this product. (The other bob's egg replacer, the non-gluten one, NOT SO MUCH. Didn't find it helpful in baked goods . . . )

Can you mix this with almond milk instead of water?

BEST ANSWER: Yes, we made cornbread using it with almond milk. The best tasting cornbread we ever ate. My wife is picky when it comes to her cornbread. I am so so when it comes to eating cornbread, but this cornbread was so good I ate it plain and remarked to her its the best she ever made. Only thing, when first adding it stir to get your desired consistency.
Has anyone ever tried using this product to bake bread, buns, tarts, brioches, etc.?

BEST ANSWER: Just started using it. We baked both wheat and cornbread using a bread-making machine. Noticed when first adding the Vegetarian Egg Replacer we needed to stir for good consistency, The final products were far superior to using eggs. The results were so good we eat them plain. We are recent graduates of Forks Over Knives cooking school and are committed to the Whole Foods Plant Based lifestyle.
Can the egg replacer be used to make keto cloud bread?

BEST ANSWER: Though I use the egg replacer in most baked items, I don't think they would work in keto cloud bread because you can't whip them up like you can real egg whites - I don't think the bread would end up as light as it is intended to. That is my opinion, and I have baked many kinds of bread over decades of cooking for my very large family.

BEST ANSWER: This product is best stored in an airtight container in a cool, dry place. The fridge is an excellent spot for this, but if you use it pretty often, it will be fine in a cool, dry place.
