The best bean for red beans and rice
These smaller red beans are hard to find--not exactly azuki beans and much better than the larger red beans. I use them to make red beans with rice with a creole seasoning.

We frequently fix red beans over brown rice, and find we like the texture of this bean over the larger red kidney beans. It holds its shape better and therefore gives more body to the mixture.
