BEST ANSWER: Depending on the reason for the inclusion of soy lecithin, it's likely that it can just be left out of the recipe. Most recipes rely on it to help increase the shelf life of the baked good. In that instance, you can just skip it. If it's being used to emulsify your recipe, you can use Xanthan Gum or Tapioca Flour as a replacement.
