Preheat oven to 375°F; line a baking sheet with parchment paper and set aside.
In a medium bowl, combine all-purpose flour, graham flour, cocoa powder, baking soda, salt, and spices and set aside.
In a large bowl, mix butter, sugar, and honey until combined. Add egg and vanilla extract and mix well. Add dry mixture and mix until combined, then add chocolate chunks and shredded coconut and mix well.
Portion onto prepared baking sheet, about 2 Tbsp per cookie, leaving 2-inches between each cookie. Bake until set, 10 - 12 minutes. Let cool slightly before moving cookies to a cooling rack.
