  1. Preheat oven to 350°F. Grease a 11" X 7" nonstick pan. Set aside. Place all ingredients, except coffee, in large bowl and blend with electric mixer. Add coffee and mix until thoroughly blended. Pour into prepared pan and bake for 30-35 minutes or until toothpick inserted in center of cake comes out clean. Serves 12.

      Yes, this recipe will work in a 9×9 pan. Be sure to keep the oven temperature at 350ºF. Baking time may be slightly increased.

      Hi Bryce,
      You can use this recipe to make cupcakes, just be careful not to overfill the cups as they do rise quite a bit. You may need to reduce the bake time slightly as well. A toothpick inserted in the center of the cupcake should come out clean when they are done baking.
