Freezing the leftovers allow for a quick breakfast during the week. This recipe was not tested in the Bob�s Red Mill Kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

Gluten Free Pancake Mix
1 Tbsp
Baking Powder
1/2 tsp
Sea Salt
1 Tbsp
Honey

Eggs
large (or egg alternative)
2 Tbsp
Vegetable Oil
1/2 cup
Grapefruit Juice
1/2 cup
Orange Juice
1/2 cup
Apple Juice
1 tsp
Vanilla Extract
Instructions
Spray nonstick vegetable oil onto your favorite waffle iron, then preheat the iron. Combine dry ingredients in large bowl. In a separate bowl, whisk together eggs, oil, juices, and vanilla. Whisk liquid mixture into dry ingredients to combine. Pour onto heated waffle iron, and close lid quickly. Cook according to the waffle irons manufacturers instructions. Makes 8 waffles.
