Pancakes
  1. Blend 1 cup pancake mix, 1 egg, and 1 Tbsp oil. Add approximately 1 cup water until desired thickness of batter is reached. Heat lightly greased griddle or skillet over medium-high heat. Pour scant 1/3 cup batter onto griddle or skillet for each pancake. Cook until bubbly, turn and cook until done. Makes 2 servings.



    Here's a few of our favorite ways to serve 10 Grain Pancakes:



    *Apple Pancakes - Stir in 1/2 cup applesauce and adjust water to taste.



    *Cheese Pancakes - Stir in 1 cup shredded cheese.



    *Blueberry Pancakes - Fold in 1/2 cup blueberries.



    *Nut Pancakes - Add 1/4 to 1/2 cup chopped nuts.



    *Banana Pancakes - Add 1/3 cup diced bananas. Dust with powdered sugar.



    *Clam Pancakes - Fold in 1/2 cup chopped cooked clams, small amount of grated onion and chopped parsley. Serve with ketchup or tomato sauce.



    *Ham and Cheese Pancakes - Use 1/4 cup oil. Fold in 1/2 cup cooked, chopped ham and 1/2 cup grated cheese.
Waffles
  1. Blend mix, eggs, and oil. Add water as above. For delightfully light waffles, add equal parts (1 cup) mix and water, 2 egg yolks and 2 Tbsp. oil. Beat egg whites until stiff. Beat together other ingredients and fold in egg whites. Bake on hot waffle iron.



    Makes 2 servings.
Recipe Notes

*Try replacing about 1/4 cup of water with soda water for extra leavening power.

    This is the best pancake mix I have ever used. I’ve made my own in the past until I discovered Bob’s. I use all seltzer for the liquid, rather than water. The results are the lightest, most delicious pancakes you can imagine.

    I also add a little oat bran, Maguey’s Sweet Sap, plus 1/8 tsp baking soda, and use melted butter instead of oil and milk instead of water. Sometimes I use a little yogurt in place of some of the milk, too. And I like to use at least half of the Red Mill Buckwheat Pancake mix, too.

    It’s fun to experiment and we love the extra flavor and heft that comes from the extras. These mixes are a great way to ensure success, though, no matter how you choose to make them! Wonderful!!!

    I’m having trouble with the pancakes breaking and coming apart when I flip them to cook the second side. Do you have any advice for how to fix this?

      Hi Karen,
      There could be a couple of things that are to blame for your pancakes falling apart. Your batter could be too thin which may make them hard to flip; if your batter seems runny try cutting back on the liquid portion of the recipe. You could also be trying to turn them too soon. Be sure to wait for bubbles to appear on the surface of the pancakes which is a good indication that the bottom layer is done cooking. You’ll also want to make sure that your pan is hot enough- the bottom layer may not be cooking enough to hold up to handling if not.

        Hi Karen,
        To check that the pan is hot enough, dip your fingertips in cool water. Then snap some of that water into the pan. If it sizzles and disappears, you are okay, otherwise more heat. I set my glass-top on 6, the straight down position.
        Bubbles will cover nearly the entire surface when they are ready to flip. Penalty for too soon is a real mess. Penalty for too late is the first one is a wee bit dark, but not to worry – somebody will eat that first one for you!

      Please note that our 10 Grain Pancake and waffle mix is not vegan as it contains Buttermilk Powder. If you’d like to replace the egg in the recipe you can do so with a powdered egg replacer, or an alternative egg replacer like aquafaba.

    Ive made these according to the directions on the back and ive not been impressed with the results. They are so flat no matter how thin or thick the batter is. Ill try using alittle more baking soda in the batter next time. Otherwise this goes into the garbage!

    No Stove for use right now, but rice pot only—Needing all meal recipes with No sugar unless using Stevia with inulin or raw(green Stevia) & no gluten. HELP

    Hi there,
    Has the recipe changed? I remembered having to add 3/4 cup of milk before the current batch and previously the waffles turned out so great, now with the new recipe I can’t seem to get it to work. Sticks to the waffle iron and doesn’t rise. What gives?
