  1. Bring 3 cups water and 1/4 tsp salt to a boil then add 1 cup Bob's Red Mill Steel Cut Oats.
  2. Reduce heat to a low simmer. Cover and cook 10 - 20 minutes (depending on how chewy you like your cereal). Stir occasionally.
  3. Remove from heat and let stand covered for a couple of minutes.

Serving Suggestions

  • Serve with milk, cream or a pat of butter.
  • Add brown sugar, honey or maple syrup for sweetness.
  • Add fresh or dried fruit, raisins, nuts or a dash of cinnamon.

    Serve with strained yogurt for higher protein. Choose whole milk like Siggi’s Skyr to best flavor and nutritional balance.

    Walnuts are best to complement the taste.

    Fresh berries preferred to dried fruit to reduce sugar.

    The easiest way to cook steel cut oatmeal is in a combi steam oven. No stirring required. Just mix with water and set a steam mode for 30 min. Done!

    Here’s a simpler recipe that can be eaten with your sweetener of choice or as a savory dish.

    Ingredients:
    1 C steel cut oats (not Scottish, Irish, etc.)
    2 C water
    1 tsp butter (not oleo or oil)
    Cream, Half and Half, butter to taste

    1. Melt the butter in a 4Q sauce pan.
    2. Add the oats and stir often until evenly toasted, about 4-5 minutes. Do not overcook or the oats will become bitter.
    3. When the oats are toasted, add all the water and bring to a boil. At boil, reduce heat to a simmer and cover, once the oats have absorbed about half the water (this helps avoid boiling over). Simmer for about 10 minutes; longer if softer oats are desired. This may require more water than the 2 C.
    4. After 10 minutes, remove from heat and keep pot covered for about 5 minutes, so liquor is evenly absorbed through the oats.
    5. Serve with a TBS of half and half or cream. A pat of butter on top is a yummy addition.

    I must be dense because these instructions don’t work for me, even after 20 Min’s there is still a good amount of water left.
