Kudos on the new packaging; A big improvement!
I've been using Bob's Red Mill Potato Starch for the past couple years and have always been happy with it; though, the cellophane bag it came in has always necessitated transferring the product itself to a sturdier zip lock bag to ensure it stayed fresh & neat. I was very surprised, then, when I received my recent order to see that a new, resealable, much more durable bag is now being used for the packaging; the new velcro type closure is great and ensures a good seal every time - better yet, it means no more having to transfer to another bag for storage. Thank You!

Potato Starch vs Flour???
I make my own gluten-free baking blend using millet flour, sweet rice flour, and potato starch. I accidentally ordered potato *flour* one time--this does not work, it is too gummy for baking (flour includes the potato peels and starch). You are welcome. (Potato flour is great for thickening gravies, soup. I had ordered 4-bags--that's a lot of gravy...) Let me know if you have any success using potato flour for anything else!

Crispy gluten free waffles
Love this. I went through recipe after recipe for good crispy gluten free waffles until I found one that used rice flour and potato starch, Fast, easy and always make good waffles. I have had problems finding potato starch in the store and other things just won't do. Yummy, yummy.

So far so wonderful! I've used other brands and I love this stuff! Use it in all my gum free mixes and recipes, as well as cake, cookies and breads! Oh and sauces and gravies! All I can say is this is the bomb!!! Thank you Bob for caring for the Celiac Community and creating ingredients that are not only safe for us to eat, but Delicious!!

Dr. Mark Hyman from the Eat Fat Get Thin diet and book, and PBS specials actually recommends your Potato Starch as a resistant starch. Are you sure about your answer on December 18 that it is not a resistant starch?

Is this potato starch also resistant starch? The label notes 0 dietary fiber--so it does not sound like resistant starch

BEST ANSWER: Our Potato Starch is not a resistant starch. The process of removing the starch component from the potato eliminates any resistant starch benefits.
Is Potato Starch the same as Potato Flour? I've been using Bob's Red Mill Potato Starch in my baked cakes but our local grocer only has Bob's Red Mill Potato Flour now. Are they interchangeable?

BEST ANSWER: Potato flour and potato starch are two different items. Potato flour is made from steamed, dried and ground russet potatoes. Potato starch (also know as potato starch flour – it can be confusing) is made from starch potatoes. The water is separated after grinding and the starch is then extracted from the remaining potato pulp. Potato Flour works well in baking and makes a great soup base while Potato Starch is added to baked goods to help retain moisture and produce a tender crumb. 1 Tbsp of Potato Flour is equal to ½ tsp Potato Starch.
Can you mix this with water to drink?

BEST ANSWER: Yes, you could do that. It might get a bit thick, depending on your ratio of starch to water, but, yes, you can drink it.
