Are you new to the paleo diet? Here are some quick facts:
  • The principle motto is, “If a caveman didn’t eat it, neither should you”

Good product - especially for gluten free
I have celiac disease and have to eat gluten free. I tried this paleo flour in pizza crust. I used the recipe on the back of the package. I added garlic powder and some other seasonings and a half cup of mozzarella cheese. When I rolled it out, I topped it with a mixture of Parmesan cheese and seasonings before prebaking the crust for 8 maybe 10 minutes. Then I added my sauce and toppings and baked another 10 minutes. This isn't bad. You have to realize there is no gluten so there will be no chew like a regular pizza crust. There is a hint of sweet from the coconut flour. Also, I have found it's better to go light on the sauce, because the almond flour will absorb it if there is too much and the crust will fall apart.

Paleo Baking flour is a wonderful substitute for all purpose flour in baking cookies, cakes, biscuits, muffins etc. when family has grain allergies. It is the only gluten free mix that I have found that does not contain rice flour, and has a great flavor.

BEST ANSWER: If, by roux, you mean water and flour used to thicken a sauce... I think it works just fine. Just as any flour would really. I can't give exact measurements because I don't use them much, but just give it a whirl! I Little trial and error can go a long way. I have substituted many flours in recipes with this and I have had great success!

BEST ANSWER: Typically, when using this product, you will be using a lot of eggs. Between the starches in the flour blend and the eggs, you don't really need to use xanthan gum. BEST ANSWER: In theory, this would work, but we recommend trying out the recipes on our package first to get a feel for the product. Our Paleo Baking Flour does not contain gluten, so some adjustment to your wheat-based recipe may be needed.

How to make banana muffins with paleo mix?

BEST ANSWER: Banana Nut Muffins for Two
1/2 cup flour (I use gluten free flours; you could try Paleo mix)
1/2 tsp baking soda
pinch salt
1 very ripe banana
3 Tbsp brown sugar
1 Tbsp butter or coconut oil, melted
1 egg (or flax egg: 1T ground flaxseed meal + 2-1/2 T water, rest 5 min)
1/2 tsp vanilla extract
4 Tbsp whole walnuts for topping
Directions: Mix dry and wet ingredients separately, then combine. Divide batter between two oiled ramekins, or 12-mini-muffin tin. Top with walnuts. Bake 375 for 25-30 minutes (about 12 minutes for mini-muffins).

Can the Paleo flour be used successfully for vegan (eggless) recipes? Each time I have tried something, the recipe turns out gummy.

BEST ANSWER: To achieve success with vegan baking, it is best to use a recipe that was specifically formulated as "vegan". Not sure what you tried to bake, but, if your recipes call for any starches and then you substitute this Paleo Flour for another flour in your recipe, then you may be baking with a high percentage of starch which will result in "gumminess". Another source of starch is the commonly used EnerG Egg Replacer. Underbaking can also be a problem as can using the wrong size pan. For example, I often choose to make Paleo or GF bread shaped into buns (English Muffin Rings work beautifully!) The smaller sized buns rise well, bake more evenly, and keep their shape. Please note that this Paleo Flour contains Coconut Flour which absorbs a lot of liquid and can result in "heavy" baked goods if your recipe was not developed with coconut flour in mind. This is a fabulous product for Paleo baked goods and I am so sorry that you have been having trouble. I hope you keep trying! Best wishes for success!
If a recipe calls for 1 1/2 cups whole wheat pastry flour and 1/2 cup almond flour, can I substitute all of the flours with the Paleo Flour basically using 2 cups of the Paleo flour? Thank you

BEST ANSWER: You can use this mix in other Paleo specific recipes that call for similar flours (arrowroot, tapioca, coconut, almond) but it is not a good substitute for All Purpose Flour or Gluten Free 1-to-1 Flour as it absorbs liquids a little differently due to the unique blend of flours. This is why most paleo bread recipes will be “quick breads” ( like zucchini bread or banana bread) that use baking powder or baking soda as a leavening agent. The ingredients are listed on the nutritional label in order from greatest to least, but we can’t disclose the amounts of each- we apologize for the inconvenience.
