Fresh & Seasonal Recipes: April

Hello and welcome to our latest edition of Fresh & Seasonal Recipes! Spring is a time of togetherness and (hopefully) enjoying some sunny weather. Gathering with friends and loved ones is a wonderful way to celebrate the season, and making delicious food with good ingredients is the best way to show you care. We love selecting fresh April produce at the grocery store or our local Farmer's markets and creating some truly special dishes to share. Read on for our favorite picks!

Arugula

Festive Farro Salad

This peppery salad green is a natural for all kinds of Spring recipes: not only does it have a distinctive flavor, but it's beautiful as a garnish for grain bowls, tucked into salads and more. We love this vitamin-packed veggie in this Farro Salad with Arugula, bursting with Organic Farro, Brussels sprouts, pomegranate seeds and goat cheese. Tossed with plenty of arugula and a champagne-Dijon vinaigrette, it's a beautiful and delicious centerpiece to any Spring gathering.

Another lovely choice is this Black Bean Quinoa Salad. This gluten free, vegan salad includes arugula, Organic Tri-Color Quinoa, hearty black beans, crisp veggies and a zingy lime and cumin dressing. Delicious as-is, or add your favorite protein.

Cauliflower

Buffalo Cauliflower Falafel

In recent years, cauliflower has gone from being the reject from the crudite platter to the belle of the ball! This cruciferous vegetable in an excellent source of vitamin C, and its mild flavor and firm-yet-tender texture makes it an ideal choice for both sweet and savory recipes. This Buffalo Baked Cauliflower Falafel is extra flavorful with the addition of cauliflower, Gluten Free Old Fashioned Rolled OatsOrganic Chia Seed and buffalo wing sauce!

Grain bowls are an excellent sweep-the-kitchen dish—you can use whatever you have on hand—and this Pesto and Farro Grain Bowl shows the versatility of cauliflower. Instead of ricing it, here cauliflower is roasted with balsamic vinegar, sea salt and pepper and nestled on a bed of Brown Lentils, Organic Farro and fresh vegetables. Pesto, parmesan and fresh herbs add incredible flavor.

Leeks

Mild, sweet and fresh, leeks are the French cousin of onions and garlic that you need in your life right now. Thinly slice the white and pale green parts and use in salads and sautes, and save the greens for stock. #ProTip: these multi-layered beauties tend to hold a lot of sand and soil, so wash thoroughly in a colander after slicing! We love leeks in this Paleo Squash Galette, made with Paleo Baking Flour and filled with butternut squash, pancetta and leeks.

For maximum cuteness, we cannot get over these Mini Spring Vegetable Quiches! Here, a savory custard filled with tender asparagus, leeks, garlic and cheese are baked in tiny tart crusts made with Gluten Free 1-to-1 Baking Flour.

Green Onions

Yes, green onions are available year-round at rock bottom prices, but now is when they really shine! Stock up to add a little color and lots of flavor to all kinds of dishes. Plus: if you slice off the tops and place the roots in a glass with a little water, they'll keep growing! Looking for a savory breakfast that pops? Try this Savory Oatmeal with Baked Eggs. Green onions, garlic and chicken broth are simmered with Steel Cut Oats and topped with protein-rich eggs! Add some extra flavor with soy sauce, sriracha or even ketchup!

This recipe for Cheddar, Bacon, and Green Onion Cornbread is a comfort-food favorite, and gluten free. Just prepare our Gluten Free Cornbread Mix and add savory bacon, rich cheddar and bright green onions!

Potatoes

Scalloped-Potatoes

Potatoes are always a wonderful item to keep on hand. Not only do they last a long time, but you can serve them up in so many different ways! Bake them, mash them, fry them, slice them and bake 'em on a pizza—the sky's the limit. We're especially into this Dairy and Gluten Free Scalloped Potatoes dish. Thinly sliced potatoes are smothered in a creamy sauce made of Chickpea Flour and topped with sauteed onions and fresh parsley.

One upcoming cherished holiday is Passover. While noodle kugel is always a favorite, we think you'll love this savory Potato Kugel, made with grated potatoes and onions, Potato Starch, eggs and chives. Simple yet addictive, plus it's a wonderful side for any meal of the day.

Rhubarb

Oatmeal-Crisp-Rhubarb-Bars

Rhubarb isn't just gorgeously colored and incredibly flavorful, but it's a good source of vitamin C as well! These Oatmeal Crisp Rhubarb Bars are wonderful as a snack or dessert (or even breakfast). A base of Organic Regular Rolled Oats, Unbleached White All-Purpose Flour, almonds and spices is topped with a vibrant compote of rhubarb, lemon and ginger. Delicious!

These Cornmeal-Ricotta Pancakes with Strawberry-Rhubarb Syrup are the epitome of spring! Tender pancakes made with Unbleached White All-Purpose Flour, Fine Grind Cornmeal and rice ricotta is topped with a tangy-sweet syrup made with strawberries, rhubarb, brown sugar and lemon.

Spring Peas

Gluten-Free-Pea-Ravioli-with-Browned-Butter-Sauce

Is there are vegetable that shouts "spring" louder (and more colorfully) than fresh green peas? Peas quickly convert their natural sugars into starches once they're picked, so it's worth it to grow them yourselves or (safely) shop your local farmers market. Make the most of these precious gems with these Gluten Free Pea Ravioli with Browned Butter Sauce. Spring peas are mixed with ricotta and parmesan cheeses and lemon, then stuffed into fresh pasta made with Gluten Free 1-to-1 Baking Flour. A brown butter sauce with more fresh peas is the perfect finishing touch.

Another fantastic spring recipe is this Spring Farrotto with Mushrooms, Rapini and Peas. A scrumptious risotto made with Organic Farro is simmered with chicken broth, pancetta, spring mushrooms and onions, rapini fresh herbs and spring peas.

Passover

Paleo Latke Waffles

Passover is this month. Get inspired by our Spring Into Baking eBook, filled with our favorite recipes! We included some additional gems below.

These Coconut Macaroons are easy to make kosher for Passover: simply omit the vanilla extract, or use vanilla powder. Shredded Coconut is mixed with egg whites and honey and baked, then dipped in dark chocolate to be extra delicious.

Serve Potato Latke Waffles for an impressive-yet-easy dish that everyone will love! These light and crispy waffles are made with Paleo Baking Flour. Serve alongside a platter of toppings like lox, cream cheese and dill, or applesauce and sour cream.
