Protein Pancakes

For those mornings when you have a little extra time and really feel like treating yourself try out Erin’s Protein Pancake Recipe. These pancakes will not only keep you full throughout the day, but they also use powerful ingredients like Greek yogurt and peanut butter to give you an added boost of protein. Greek yogurt is a great natural source of protein that will give these pancakes a fluffy and light texture without changing the taste. For even more flavor try topping these pancakes with bananas and chocolate chips. Erin also suggests using all the batter and then freezing the leftovers so you can enjoy this sweet breakfast during the week when you’re stretched on time. http://dinnersdishesanddesserts.com/protein-pancakes/ [caption id="attachment_1042717" align="aligncenter" width="620"]huckleberry-pancakes-1008 feastingathome.com[/caption]

Huckleberry Pancakes

Just saying “Huckleberry Pancakes” is fun. By swapping all-purpose flour for almond flour, Sylvia from Feasting at Home has created a blend of healthy, nutritious and delicious flavors that will leave you feeling great. In the health world, huckleberries are a definite superfood. Aside from a large amount of antioxidants, they are also a great source of vitamins A and B, help lower cholesterol, and help fight off viruses and bacteria! The use of almond flour in this recipe also adds a significant amount of protein to this sweet breakfast which can help boost your energy levels and make you more alert throughout the day. These pancakes are perfect to eat right before work, or even before sending the kids off to school. http://www.feastingathome.com/huckleberry-pancakes-with-almond-flour/ [caption id="attachment_1042720" align="alignnone" width="783"]blender-chocolate-protein-pancakes-web-3-of-4 rachelcooks.com[/caption]

Pumpkin Protein Pancakes

Pumpkin flavored treats don’t have to end when the holidays do. Pumpkins are a great source of vitamins, help protect your skin, and can even aid in weight loss. When mixed with vanilla protein powder this sweet treat can be enjoyed in the mornings or even after a workout to help speed up your recovery. The egg whites and oatmeal in this recipe from Spoon University also provide amazing health benefits and will keep you full until lunch, helping you steer clear of any sugary snacks. http://spoonuniversity.com/recipe/pumpkin-protein-pancakes/ [caption id="attachment_1042726" align="aligncenter" width="680"]blueberry-pancakes-1 shewearsmanyhats.com[/caption]

Yogurt Blueberry Pancakes

Yogurt, blueberries, and pancakes? Sounds like an incredible breakfast to me! After trying these pancakes, plain buttermilk ones will hardly satisfy your cravings. To make this recipe even easier the batter can be mixed up the night before, so you don’t have to spend all morning in the kitchen measuring ingredients. Amy from She Wears Many Hats also uses honey to sweeten up this recipe instead of artificial sweeteners, making sure that every ingredient stays wholesome and healthy. The yogurt used to make these pancakes is a great source of protein, yet if you still want more, adding in some of your favorite vanilla protein powder works great with the blueberry flavor and will give you that extra boost you’re looking for. http://shewearsmanyhats.com/yogurt-blueberry-pancakes-recipe/ [caption id="attachment_1042731" align="aligncenter" width="685"]gluten-free-meyer-lemon-and-blueberry-pancakes-pineappleandcoconut-com-glutenfree-6 pineappleandcoconut.com[/caption]

And if that isn’t enough to convince you how incredible these Meyer Lemon and Blueberry Pancakes are, they are also gluten free. Meaning even if those with gluten allergies can enjoy their amazing benefits. I've had good luck with just a mashed banana and an egg for one serving, no flour. You can add blueberries or chopped apples, cinnamon, pumpkin seeds, etc. I coat the griddle with coconut oil and then top with butter or some more coconut oil and drizzle with maple syrup or honey. You can add some brown rice flour or coconut flour to change the consistency but I like to just keep it simple.

These look delicious. For those who are wanting the recipes, like I did, I was able to find clickable links when I clicked on the names of the blogs above inside the paragraphs. They are hard to find because they are the same color as the rest of the writing, but they are there. :)

I’ve been wanting to try the chai protein powder because I imagine you could make something like a chai frappuchino with it. Also glad to have another flavored protein powder option that isn’t sweetened with stevia…they are rare!

I just made high protein pancakes this morning. 4 eggs, a handful of chopped green onions, turkey bacon crumbled up, 1/3 to 1/2 cup of Bob's Red Mill Arrowroot flour, 1/2 teaspoon of garlic powder, black pepper, and a bit of turmeric powder, and a tablespoon of avocado oil. Fried in coconut oil. Sooooo delicious!
