The holidays are always a busy time of the year. There is shopping to do, food to cook, desserts to make, parties to attend and other holiday festivities to keep you hopping. That means cooking a great meal may require more time than you have. Any shortcuts that can help make the process faster and easier are a win in our book. And nothing goes over better than an amazing casserole. The best part is that casseroles are super easy to prepare and can even be made ahead of time and still taste just as good--or even better. You can just pop them in the oven to warm them back up and it’s like they were just made! Or, do all the prep work and leave the baking part for the day of your shindig. Either way, you’re saving time and getting a jump on the day. Why not start your holiday off right with one of the three Thanksgiving casserole dishes below? We know you will be thrilled with them.

Cheesy Polenta Casserole with Gorgonzola

Thanksgiving Casseroles That Will Hit The Spot _ Bob’s Red Mill Is there anything more comforting than a heaping helping of corn grits? We say it’s hard to beat! This cheesy polenta casserole with gorgonzola does a pretty good job of hitting the spot. Simply combine your polenta with water, milk, salt and pepper and heat it up, whisking often, until the mixture is creamy but still a little soupy. Saute sliced onions until they are soft, then whisk your onion, eggs, parmesan, gorgonzola and chopped green onions into the creamy, cooked polenta. Make sure everything is mixed evenly, then pour into your casserole dish and pop it into the oven. This recipe takes about 20 minutes of prep time and 35-40 minutes to bake until done. Let it cool for about 15 minutes or so, and it’s ready to serve--or be covered and saved to serve the next day! This casserole will feed about 20 people, which makes it great for large families. And if you’re making it ahead of time to serve the next day, just uncover it and pop it into the oven on low heat when you’re ready to warm it back up. We promise, no one will be able to tell the difference!

Bean and Cornbread Casserole for the Slow Cooker

If grits don’t sing “home sweet home,” then cornbread definitely does! Especially when it’s cornbread and beans. The two go together like . . . well, cornbread and beans! And with this bean and cornbread casserole, you get the best of both in an easy crockpot recipe all your family will rave about. Start by making your bean mixture first, using cooked red kidney beans and pinto beans. Saute yummy onion, bell pepper and garlic and toss that into the mixture. Add other ingredients like diced tomatoes, sauce, tomato juice and hot sauce for a kick of flavor. You can also add seasonings like chili powder, sea salt and black pepper to taste, along with prepared mustard. Let that deliciousness simmer on high for about an hour, and then you can add your ingredients for the top layer of cornbread. We use fine grind cornmeal, unbleached white all-purpose flour and baking powder, along with a bit of salt and sugar, to make the cornbread. Creamy corn also really makes this recipe shine, along with milk, egg substitute and vegetable oil. Spoon it over the top of your beans and let everything simmer for another 1 1/2-2 hours for a top layer of fluffy, corny, cornbread blanketing a tasty blend of protein and fiber-packed beans.

Textured Vegetable Protein Almond Rice Casserole

If you’re looking for a great casserole to please your vegan friends, this textured vegetable protein and almond rice casserole is the way to go. It uses textured vegetable protein and long-grain brown rice, along with sliced almonds for a bit of crunch. Ketchup, crushed thyme, crushed marjoram and sea salt add flavor and seasoning, along with light miso. Chopped onions sautéed in peanut or canola oil complete the ingredient list. Once all the goodies are prepared and placed in your baking dish, pop that thing in the oven for 30-35 minutes and let it cook. Don’t forget to cover it with foil first. Or if you prefer, prep it the night before and pop it in the oven the next day. Either way, it turns out beautifully. You can also tweak this recipe and sub mushrooms for the almonds if you’re a mushroom lover. Or why not try both? Rules are made to be broken, right?
