It’s the holiday season, and sometimes it seems like every week there’s some kind of celebration or festive gathering to attend or plan or host. Baking the same things can get old pretty quickly. Desserts like pies and cakes are great, but if they don’t get eaten completely, it’s hard to figure out what to do with the leftovers. It’s not like you can bag them up and hand them to friends\ coworkers. That’s why making bite-sized desserts can be so much more economical. If there are leftovers (which may be a big if, because bite-sized nibbles tend to go quickly) you can store them and pass them out to friends and family the next day. Or you can take them to work for your office to enjoy. You could even bag them in cute, festive bags, go door-to-door in your neighborhood if you’re feeling extra charitable, and share the leftovers as gifts! Here are a few bite-sized dessert recipes to get you started.

Peppermint Hot Chocolate French Macarons

Why not try this little twist on a French classic with these peppermint hot chocolate French macarons? This recipe makes about 12 macarons, so you may want to double or triple the recipe if you’re planning on a crowd. But the nice thing is they are relatively easy to make, and they taste completely amazing. We use our almond flour mixed with cocoa powder, egg whites, powdered sugar and granulated sugar for the chocolate macaron shells. The peppermint hot chocolate buttercream filling is homemade, using butter, powdered sugar, peppermint extract and yummy marshmallow fluff. You can also use crushed candy canes to garnish the edges. This gives them even more peppermint and candy flavor, plus it makes them look extra pretty, too! The end result is fun, bite-sized, festive French macarons that your loved ones won’t be able to resist.

White Chocolate and Peppermint Covered Chocolate Cookies

These white chocolate and peppermint covered chocolate cookies fit the bill perfectly and are so delicious you probably won’t have any leftovers to share. This recipe makes about 18 cookies, so it’s up to you if you choose to double it. The nice thing about this recipe is how quick and easy it is. Plus, you can prep the dough beforehand and have the family over for a cookie decorating party if you choose. These cookies are also friendly to those with gluten sensitivities, using our gluten free 1-to-1 baking flour, along with cocoa powder, baking soda, sugar and sea salt. Mix everything with heavy cream or coconut milk, vanilla extract and butter in a food processor to form the dough. Then make your homemade chocolate coating out of melted white chocolate and butter, and top with crushed peppermint candy. Yum, yum!

Low-Carb Cinnamon “Sugar” Donut Holes

One thing you might miss if you’re trying to follow a low-carb diet is donuts. Those sweet, tender treats may seem like they are forever relegated to your past. Which is why we’ve found a substitute for you. These low-carb cinnamon donut holes are perfect to feed that craving while still staying true to a low-carb diet. Plus, these little guys contain protein as well, which is great to help curb hunger through the day. These donut holes are made with almond flour and vanilla protein powder, plus baking powder, your sweetener of choice (just make sure it replaces sugar cup-for-cup) and a pinch of sea salt. The “sugar” coating is a blend of cinnamon and powdered sweetener and makes you feel as though you’re really enjoying something totally decadent.

Hemp Protein Truffles

Continuing with the decadent-yet-nutritious theme, these hemp protein truffles are one bite-sized dessert you won’t want to miss out on. They are rich and chocolate-y, yet loaded with protein and fiber, among other goodies. You can make these truffles using our organic coconut flour, organic regular rolled oats and our hemp protein powder. Medjool dates and maple syrup add sweetness, mixed with hemp milk, coconut oil and dark chocolate chips. You’ll need to let your truffles set in the fridge or freezer for 20 minutes or so, but once they’ve hardened up they are ready to serve. See? There are all kinds of ways to enjoy the holidays and the influx of desserts and rich food.
