And its even better when its a heaping helping of gluten free cornbread stuffing that tastes so good, you cant even tell the difference. This recipe uses our gluten free cornbread mix, cooked and cut into cubes, accented with bacon and freshly minced sage. Onions, celery, minced garlic and a couple of cups of chicken broth complete this traditional holiday side and give this stuffing loads of flavor and texture. Note that you can make the cornbread a few days beforehand and allow the cubed bread to dry out naturally, or you can speed things up by toasting the cubes in the oven until they are nice and crisp. Serve this side dish with a freshly roasted Christmas bird and delight your family and friends.

Farro Risotto

If you are craving a risotto rice dish but want something a little healthier, try replacing your white rice with farro instead. Its a great whole-grain rice substitute and can be used to make a mean risotto side dish. This recipe uses organic farro cooked with golden beets, chopped onion and sliced chives. The risotto is seasoned with salt and pepper, chopped tarragon, freshly grated Parmesan cheese and dry white wine, among other things. The goal is to cook the farro until it is good and tender and most of your liquid has been absorbed. This recipe does take some time, about 45 minutes to prep and another 40-50 minutes to cook. But its well worth the effort once you taste it. Keep in mind that it yields six servings and plan accordingly. Top this dish with crispy fried shallots as a garnish and serve it up as an accompaniment to lean roast beef or that spiral ham you have been salivating over since the holiday season began.
