My husband and I are late to traditional muesli, but I'm so glad that I tried Bob's version of the gluten-free. We're both sensitive digestively, so we have to cook or warm muesli that took a little longer than 7 minutes. I actually added some bran (from Bob's) to the recipe to thickened it up some, and it was very good. I can't imagine eating oats raw out of the bag. Obviously, some people have extremely healthy digestive systems to eat it that way. But I will try the overnight thing, since that's popular, like the chia pudding, which we haven't tried yet. I used to add nuts and dried fruit to my oatmeal back in the day, so I guess I made my own version of muesli. I didn't know it's history though.
