The fresh Cassava roots are processed with 48 hours of harvesting and are thoroughly washed, peeled, and heated prior to processing into flour. Is your cassiva root cooked or air dried? what is your source and origin of your cassiva root? What part of the processing of this flour are you involved in and what testing is done on It to assure it is free of mold and contaminants? I am looking forward to trying your product and trying your recipes. I love this flour and have used several other brands. I'm always looking for good Brownies and flat bread so I will make these first. I have great recipe for Rustic Ginger Cookies of my own that I will do also.
