If you are using an Unbleached White All Purpose Flour there is no need to use Xanthan Gum. If using our Gluten Free All Purpose Flour, there is a chart on the back of the package that instructs how much Xanthan Gum to use depending on the type of baked goods you are making.

I used a recipe from a YouTube video for Keto bread flour using 192 grams of bamboo fiber, 112 Grams of almond flour 60 grams of egg white protein powder and 12 grams your Xanthum. This makes 4.5 cups. To make the loaf of bread you use 160 grams of this flour mixture plus 2 T of baking powder 1 cup warm water 1/2 cup liquid egg whites and 2T of olive. When I baked it it did not rise too top of pan. After cooling and slicing it was wet and the outer crust was hard and the crust fell off. Could this be due to too much of your Xanthum gum in the flour recipe. If so how much do you suggest I use. Thank you so much for your help❤️❤️
