Hi, I tried to use arrowroot to set a citrus pie instead of gelatin. It failed. I am going to try again, but still looking to avoid the gelatin texture. Do you have any advice to help the arrowroot set the pie?

Would adding arrowroot to the egg mixture when making meatloaf help to keep the meatloaf from crumbling? If so, how much and how? (Assume 1 kilo of meat and 2 eggs.) Thanks

Hi Eli, yes, it can be added to meatloaf for some additional binding. Here is a good way to incorporate arrowroot into a recipe like this:

Gather all ingredients together (meat, eggs, bread crumbs, etc.), and before mixing the eggs into the meat mixture, whisk 1 to 2 tablespoons of arrowroot powder into the eggs. Ensure the arrowroot is fully dissolved and the mixture is smooth.

Add the egg and arrowroot mixture to the meat mixture. Mix everything thoroughly until well combined.

Shape the mixture into a loaf and place it in a baking dish or on a baking sheet.

Bake according to the recipe’s instructions.

You should advise your readers that arrowroot loses its thickening power over time and/ or temperature. Stews, etc., thickened the day before with arrowroot must be “rejuvenated” with more arrowroot the next time they’re heated. Just go slow, as each case may differ according to ingredients.

Hi there! Tub cream cheese is much softer/airier than block cream cheese. I would suggest softened butter and more powdered sugar.

if you want to thicken water you can mix the arrowroot powder into the water and then you have to heat it? and what if you have leftover? can you leave it in the fridge or freezer?

Nice post. Can leftover arrowroot slurry be stored, say in the fridge or frozen in cubes, for future use? Accidentally made too much for my soup. Also, when reheating leftover soup, can more slurry be added to thicken this second time? Ty!

Hi Jenni - we haven't tried that, but yes - it would thicken a liquid. Incorporate a small amount into a slurry, then whisk that into the bigger batch and heat to thicken.

With flour, I like to dust stewing meat with flour and salt and pepper and brown the meat before adding liquids. Can I do that with arrowroot starch? On reading your instructions, it sounds as if it should never be cooked long. Is that correct? I also like to dip my hamburgers in flour before I fry them so it forms a crust. Can I do this with arrowroot starch/flour?

Hi Julia! Arrowroot Starch will work for both these applications. It can withstand moderate heat and will help with browning and thickening in stew as well as crisping a burger.
