your 100% stone ground wheat flour is what it says it is?
At one time
all stone ground whole wheat flour was ground on large, slow-turning stone
mills. The unique flour produced by these mills is rightfully called 100%
stone ground.
Just
think, every time you eat a hearty bowl of whole grain cereal from Bob's
Red Mill, you're eating just like the Romans did centuries ago.
We use and
believe in stone milling because no machinery has yet been developed that
grinds grains into flours, cereals, and meals quite as well as the flint-hard
quartz stones used by master millers since early Roman times.
At Bob's
Red Mill, our huge, slow turning, 100-year-old millstones naturally grind
together the bran, endosperm, and germ that contains the grain's nutritious
oil without overheating it. The cool stone grinding process preserves
valuable nutrients which are lost in conventional high-speed, high-heat
milling. Stone grinding mixes the germ, its precious oil, and finely ground
bran throughout the flour, making for a more easily digested food.
We
mill all common grains (and many unique grains as well) into healthy flours
and meals, and blend approximately 30 unique cereals, five pancake and
waffle mixes, six bread mixes, and six muffin and quick bread mixes. This
broad selection includes 36 different baking flours alone. We are continually
adding to this list, making our product line of natural, organic and Gluten
Free whole grain foods the most varied and complete in the industry.
Over the
years, the big milling companies have offered flour marked "stone ground"
at a price very close to that of roller milled flour. Fact is, some mills
label their flour as stone ground when in truth they only flush their
wheat rapidly through a stone mill. Others mill only a small percentage
by stone and then blend it with roller milled flour.
A genuine
stone mill grinds slowly -- 600 to 800 pounds of fine bread flour per
hour. When this slower method is coupled with the highest quality wheat,
it requires a modest premium price to produce.
