- Soy flour is an excellent substitute for all purpose flour. I used it to fry zucchini and it was delicious. I loved it! I'm on a low carb diet so I had been looking for something like this, but I was afraid to try something that wasn't the real thing. I'm so glad I did. It was so good that I almost felt guilty about eating it!
