    Whip the egg white separately and fold in to batter last. Let sit while pan heats. Add blueberry's to the batter if you have them ( fresh). Serve w real butter and pure maple syrup. Whipped egg whites the secret. Love them and saved a bunch over cost of other brands. Already has baking soda powder and salt. Hooked!!!!

    I hate having to cook two versions of everything. The gluten version and the gluten free. I make pancakes at our homestead and everyone loves these, don't even know they're gluten free. Win, win.

    I have not been able to eat pancakes for years, they make me extremely tired and ruin my day. I just recently was told GF is my new way of eating. I tried these and they are Wonderful! We are so excited to try new combinations.

    My usual pancake mix was stale, so I ran to the bodega next door and get this instead, and I'm so glad that I did. Wanting to be a little creative, I made coconut pancake by using coconut milk instead of milk and coconut oil instead of vegetable oil. I also fried them on coconut oil spray and sprinkles some coconut flakes on top. The pancakes turned out to be fluffy and very rich in flavor.

    I am sad to see your Pancake Mix now contains rice flour. It didn't used to. I not only can't have gluten, I must also avoid rice. The previous ingredients were potato starch, sorghum, tapioca, and corn, all of which I can eat. Bummer! :(

    Made waffles using almond milk and 2 flax eggs instead of chicken eggs and they are fantastic! They came out very light in color, but are crunchy on the outside and fluffy and moist on the inside. Absolutely delicious.

    I have been looking for a GF mix without dairy products that will actually come out - and finally found it! This stuff is amazing. Our littles can have pancakes again! The texture is great, it is easy prep, and they cook evenly, unlike most GF mixes that I have tried. Definitely getting the 2b bag!

    I'm crushed. I have a rice intolerance and the new mix has rice flour. The old version did not. The old version was one of the few (only) mixes I could find *without* rice. I should have read the ingredients when I saw the new packaging and not assumed.

    The Pancake Mix was outstanding. I added a little vanilla and sugar (we like a sweeter flavor). I also made waffles out of this mix and did not change anything. This was a huge hit with my family!

    Wow! Can someone please find my socks? Mine were just blown off after trying the GF pancake mix. Both myself and my husband are vegan so we used banana instead of egg in the mix and it was delicious! My husband comes from a direct line of celiac disease so we often eat GF products and most of the time we find the food to be dry or tasteless or crumbly, but this was not the case with your mix. In addition to swapping the banana I also added a handful of walnuts and a touch of vanilla extract, cooked them in coconut oil & served with warm maple syrup and some sliced strawberries. I can't wait to experiment more with this mix.

    We also had the GF shortbread cookies made from your mix at a neighborhood harvest party last week where she switched the butter for coconut oil then topped them with a pumpkin butter and my husband actually asked if there were any leftover to take home :)

    Lastly, I know my husband's grandmother, who has celiac disease, has found your GF pie crust mix to be a saving grace for her bridge parties with her friends.

    In closing, thank you so much for making delicious, inexpensive mixes!

    PS - I also use your corn meal for polenta and I've never been disappointed :)
