Soy Vital Wheat Gluten Bread


Proof the yeast in 1/4 cup warm water, with the molasses added. When this mixture bubbles, add the remainder of the water, the oil, salt, milk powder, vital wheat gluten and soy flour. Then add enough unbleached white flour to make a stiff dough.

Turn the dough out onto a floured board, and knead until smooth and elastic.

Shape the dough into a ball, place in a greased bowl, oil the top and cover. Set the dough in a warm place to rise until double in bulk. Then punch it down, knead lightly and let rise once again.

Shape the dough into 2 loaves and place them in greased bread pans. Let rise again.

Bake at 350°F for 50-60 minutes.

Makes 2 loaves (13 slices each).
