Black Bean, Corn & Quinoa Salad

  • 6 oz Hot & Spicy V-8 or Tomato Juice
  • 1 cup cooked Organic Quinoa Grain
  • 1 cup sweet corn, cooked (fresh, frozen or canned)
  • 1/2 cup finely chopped onion
  • 1/2 cup chopped green pepper
  • 1/2 Tb. sugar
  • 1 tsp Sea Salt
  • 1/2 cup chopped cilantro
  • 1/2 tsp Oregano, Mediterranean
  • 2 Tb. lime or lemon juice
  • 1 Tb. vinegar
  • 1 cup cooked Black Turtle Beans

Directions

In a large bowl combine all ingredients and stir. Chill for a half hour and serve. Makes 6 servings.
