Almond Cookies

Gluten Free, Low Cal, Low Carb, Low Sugar, Soy Free.



  • 1/2 tsp Ground Cinnamon
  • 2 Tbsp Maple Sugar


Step 1

Preheat oven to 300°F. Grease cookie sheet; set aside.

Step 2

With a hand mixer, blend the butter, maple sugar and vanilla extract until creamy. Add the almond meal flour and the oat flour and mix until the dough sticks together.

Step 3

Form the dough into 1-1/2 inch balls. Place them on the prepared cookie sheet and bake for 30-35 minutes. Coat the cookies in the cinnamon/maple sugar mixture while they are still warm. Allow cookies to cool completely before enjoying.

Makes 2 dozen cookies.


*Brown sugar can replace maple sugar.

These are the easiest and best tasting cookies ever. I make them for my knitting group and there is never a leftover. No one even knows they are GF

We're not GF, just like oats and almonds. We add shredded coconut and chocolate chips to taste and like them better than the Nestlé Toll House recipe.

I have made these cookies twice now and love the simplicity of the recipe, texture and taste. Coconut oil or earth balance dairy free spread have both worked.

Can I use 2 cups of the almond flour instead of the 1 cup of oat flour?

Oat Bran and Almond Meal/Flour cannot be used interchangeably in recipes, one for one. I recommend decreasing the amount of Almond Meal used in place of the Oat Flour by about ½ cup. It is also recommended that you use a binder (xanthan gum or guar gum).

I have used the recipe AS IS and it turned out Yummy!!! This time I substituted "CocoNut FlouR" for the Oat Flour= BAD substitution- talk about crummy cookies!!! I HOPE this helps

Yes, you may add chocolate chips after adding the almond meal and the oat flour.

The Almond Cookies recipe is supposed to make a light and crispy cookie and does not require baking soda.

The recipe tastes great however they turned out to be too soft and brittle. I followed the recipe with no modifications. Is the list of ingredients missing baking soda?
