GF Cornbread Mix PancakesContributed by: customer Jennifer LeMasterThis recipe comes from a customer using our Gluten Free Cornbread Mix to make pancakes. She lets the pancakes sit out to cool and then freezes them for a quick morning breakfast.
Directions
Mix all ingredients together until well blended. Batter will be a bit runny. Heat a nonstick pan on medium heat. Drop 1/4 cup of mix onto pan. Turn when you first start to see bubbles. They cook pretty quick, so don't walk away.

I tried this, but it didn\'t work the way it should. Better was too thick actually and so I added extra milk. They tasted good, but were difficult to cook. Perhaps I did something wrong, though I followed the directions.

I thought they were really good. I used coconut oil & butter. I had to thin the batter a little.
