Quinoa Veggie Burgers

This recipe was adapted from Food Everyday.

  • 1/2 cup Organic Quinoa Grain
  • 1 Carrot medium-sized, cut into large chunks
  • 4 Scallions thinly sliced
  • 1 can Great Northen Beans (15oz can) drained and rinsed
  • 1/4 cup Breadcrumbs plain dried
  • 1 Egg large-sized, lightly beaten
  • 1 Tbsp Garlic Powder
  • 1 tsp Oregano
  • 1 tsp Ground Cumin
  • 1 Salt (coarse)
  • 1 Ground Pepper


Step 1

In a small saucepan bring the water to a boil; add quinoa,
cover, and reduce heat to low. Cook until liquid is absorbed,
12 to 14 minutes; set aside.

Step 2

In a food processor, pulse carrot until finely chopped. Add cooked quinoa, half the scallions, beans, breadcrumbs, egg, cumin, salt, and pepper; pulse until combined but still slightly chunky. Add remaining scallions.

Step 3

Form mixture into four 3/4-inch-thick patties. If too soft, refrigerate 10 minutes to firm. In a large nonstick skillet, heat oil over medium; cook burgers until browned and cooked through, 8 to 10 minutes per side.
