Gluten Free Irish Soda Bread

This great Irish soda bread was made using the gluten free pizza crust mix. This recipe was not tested in the Bob's Red Mill kitchen but was submitted by a customer who wanted to share a recipe they enjoyed with others.

Directions

Remove the yeast packet from the pizza crust mix. In a food processor, combine the gluten free pizza crust dry mix, sugar, baking powder and baking soda, then pulse until blended. Add cold butter and pulse to a "meal" consistency.  
In a small bowl combine the egg, currants, half and half, vinegar and vanilla. Whisk this together to blend.
Dump the contents of the processor into the liquid ingredients and fold into a dough, careful not to over mix. Place dough in a well buttered 12-inch skillet and bake at 350°F for approx. 1 hour. Let rest 15 minutes before slicing. Makes 16 servings.
*Yeast packet can be used at a later date for home baking.

make sure you mix this in a large capacity cuisinart (11-cup). I tried it in my 7-cup and needed to add more milk but didn't have enough mixing room. Still the texture and flavor were good. I will make again but halve the recipe.

This was so simple to make and turned out great! I used craisins instead of the currants and accidentally grabbed almond extract instead of vanilla, but the resulting almond cranberry soda bread was delicious. Thanks for sharing!
