Mighty Tasty Muffins

Adapted from Special Diet Solutions by Carol Fenster, PhD.

Directions

Preheat oven to 350°F. In a large bowl, combine the first six ingredients. Let sit for 15 minutes while the cereal softens. In a separate bowl, combine remaining ingredients. Add the dry ingredients to the liquid and stir until just moistened. Spoon batter into grease muffins tins and bake for approximately 20 minutes, or until the tops of the muffins are firm. Makes 12 muffins.

Excellent -- This recipee is a keeper . Mighty Tasty Indeed. A Dense muffin with Gingerbread taste. Great with Smart Balance Blended Butter. Luv Them

I modified it some: Only used 1.5 Tb molasses, but added 2 Tb agave syrup. Used 1.5 tsp egg replacer. Added 2 Tb canola oil. Used 1/4 cup garfava, used 1/4 cup millet and 1/4 cup sorghum flour. Reduced 1/8 tsp salt. Added 1/2 cup shredded carrots and 1 Tb hemp seeds. Turned out well!
