Szechwan Peanut Salad

  • 4 cups cooked 3 Grain Wild Rice Blend
  • 2 Red Bell Pepper, chopped
  • 1/2 cup Peanuts, chopped
  • 1/2 tsp Red Pepper Flakes
  • 2 Tb Sesame Oil
  • 1-2 Tb Ginger, grated
  • 2 cloves Garlic, minced
  • 3 Tb Rice Vinegar
  • 2 Tb Soy Sauce
  • 4 stems Green Onion, sliced

Directions

Blend all ingredients in a large bowl. Chill for an hour before serving.

Makes 15 Servings.
