Triticale and Edamame Salad

  • 3 cups Triticale Berries cooked
  • 1 pkg Edamame (soy beans) (shelled) 16oz bag frozen
  • 1 can Diced Tomatoes (15oz can)
  • 3/4 cup Feta Cheese crumbled
  • 2 Green Onions chopped
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Balsamic Vinegar
  • 1 Salt and Pepper (to taste)


To cook Bob's Red Mill Triticale Berries simply place 3/4 cup dry triticale berries and 3 cups water into a pan and bring to a boil. Then lower heat, cover and simmer for about 45 minutes or until triticale is chewy and soft. Drain, if necessary, and let cool.

3/4 cups triticale berries will make about 3 cups cooked.

Cook shelled edamame according to package directions. Drain and let cool. In a large bowl, mix all ingredients together. Season gently with salt and pepper.

Makes 6 servings.
