Whole Grain Polenta


In a large pot, bring water and salt to a boil. Slowly add in the cornmeal, stirring as you pour.

Reduce heat and simmer gently. With a long handled spoon, stir mixture frequently to prevent sticking until very thick; about 30 minutes.

Stir in butter, salt or spices as desired.

Spoon polenta into an oiled bowl and let stand for 10 minutes. Invert polenta onto a flat plate; mixture will hold the shape.

Cut polenta in slices and serve hot with your favorite sauce. Refrigerate leftovers for other dishes throughout the week.
