Wheat Berry & White Bean Salad (Using Hard Red Wheat)

  • 1 cup Hard Red Wheat Berries cooked
  • 1/4 tsp Sea Salt
  • 2 Tbsp Shallots minced
  • 1 Tbsp Honey Mustard
  • 2 Tbsp Parsley chopped
  • 2 Tbsp White Wine Vinegar
  • 2 Tbsp Lemon Juice or Lime Juice
  • 1/2 cup Olive Oil
  • 1 Vinaigrette Dressing
  • 1/2 cup Tomato diced
  • 1/2 cup Celery sliced
  • 1/2 cup Green Onion chopped
  • 1 cup Navy Beans or White Beans, cooked
  • 1/4 tsp Black Pepper (Medium Grind)


Mix the vinaigrette by combining all the ingredients with a whisk or blender. Add the salad ingredients and mix well. Let chill overnight or for several hours to let the flavors blend. Serve chilled on a bed of leaf lettuce.

Makes 10 servings.

I used to work as a chef at a coffee shop that served a lot of vegan and vegetarian offerings. Every time I made this salad it would FLY out the door. I altered the recipe and made it vegan by substituting Agave and mustard for the honey mustard. I LOVE THIS RECIPE!

I served this salad to my friends who were curious about vegetarian dishes. They described it as tasting "meaty." It's a big hit at potlucks and great to have on hand in the summer when you just want to dish up something yummy for dinner without cooking.
