Curried Buckwheat Salad

  • 1/4 cup Parsley chopped fresh
  • 1 tsp Curry Powder
  • 1/2 tsp Turmeric (ground)
  • 1/2 tsp Ground Ginger
  • 1/4 cup Vegetable Oil
  • 1/4 cup Lemon Juice
  • 1-2 Tbsp Onion finely minced
  • 1/2 cup Green Bell Pepper chopped
  • 1/2 cup Sliced Almonds
  • 1/4 cup RAISINS - NATURAL UNSULFURED
  • 3-1/2 cups Buckwheat Groats cooked & chilled

Directions

Combine all ingredients; stir gently to mix. Chill several hours to allow flavors to blend. This salad makes a tasty accompaniment to plain grilled meats or a wonderful addition to a summer picnic or buffet table.

Makes 4-6 servings.
