DirectionsStep 1Preheat oven to 350°F. Coat a 9” x 5” nonstick pan (or two 5” x 2-1/2” pans) with cooking spray; set aside.Step 2Cream the oil, sugar, eggs, and vanilla together.Step 3Mix together the flour, xanthan gum, salt, baking powder and spices. Add flour mixture to egg mixture, alternating with bananas. Stir in nuts and raisins. Batter will be somewhat soft.Step 4Bake the 9” x 5” pan for 1 hour, bake the 5” x 2-1/2” pans for 45 minutes.Cool on wire rack before cutting. Yield: 8 servings |

This made fantastic banana bread. I had the gluten-free all purpose baking flour, so I just used that instead of the garbanzo flour, potato starch & tapioca flour. Worked like a charm.

Kelly, what measurement did you use for the gf flour ?

Most likely, Kelly used 1-3/4 cups GF All Purpose Flour: 1 cup garbanzo fava + 1/2 cup potato starch + 1/4 cup tapioca flour = 1-3/4 cups.
