Gluten Free Pancake CookiesContributed by: Bob's Red Mill Natural FoodsThis recipe uses our Gluten Free Pancake Mix to get a simple and quick cookie fix.
DirectionsStep 1Preheat oven to 350°F.Cream together sugar and margarine until smooth with electric mixer, then add milk and vanilla and mix until blended. Add pancake mix and chocolate chips and combine with liquid ingredients until blended. Place on greased cookie sheet and bake 10-12 minutes. Makes 2 dozen cookies. Step 2For other cookie options use any combination of following ingredients to equal 1/2 cup to replace the chocolate chips: Shredded Coconut, Sliced Almonds, Currants, Spices, Cranberries, Walnuts, Raisins, Pecans.Customer Deborah Pouliot recommends adding 1 tsp ground ginger and 1/2 tsp cinnamon and omits the chocolate chips. Good flavor but cookies were flat and crisp.

My cookies were also thin and crispy but mushy in the center. I left them in for about 15 minutes. Maybe it was oven trouble but I think addition of eggs or baking soda or both would help this recipe out. Great mix for cookie dough though! (I added strawberry instant oatmeal for flavor)

Yikes! It needs something! My "cookies" were a flat mass of crumbs!
This recipe seriously needs an overhaul or do others a favor and remove it :) |
